10. Summary of the thesis results:
While there have been many studies on cuisine, none have focused on traditional Ha Long cuisine specifically for tourists. This gap in both theory and practice, given the existing potential and value, raises the question of how to research, exploit, and develop it to promote tourism not only in Ha Long City and Quang Ninh province in particular, but also in Vietnam as a whole.
This thesis has systematically selected relevant concepts and theoretical issues to form a theoretical basis for traditional cuisine serving tourism development for the research topic, focusing on studying the role of cuisine in food and beverage business activities; and the influence of Vietnamese culinary culture on food and beverage business activities in hotels and restaurants.
This thesis studies the current state of exploiting traditional Ha Long cuisine to serve tourists visiting Quang Ninh. The thesis collected and processed data and information using practical survey methods: direct visits to selected hotels to gather information through observation, direct contact, and interviews. Analysis and synthesis methods were employed to clarify and concretize the research content.
Based on that, we propose directions and solutions to promote, preserve, exploit, and develop traditional Ha Long cuisine to serve tourists.

10. Summary of the results of the thesis:
There have been many studies on food tourism but none of them on traditional food tourism of Halong. Because of this gap on theory and practice of this area, based on its potentiality and value, therefore how are the research, exploitation and development to be carried out to promote not only the development of Halong tourism in specific, but also for a better Vietnam tourism in general.
This thesis has systemized in sorting out related ideas and theoretical issues in order to form a sound theory about traditional food tourism for the study of this thesis which focuses on the study of the role of culinary in food and beverage business; the impact of Vietnam food culture and the food and beverage businesses in restaurants, hotels…
The study on the actual state of exploitation in traditional food tourism of Halong for Tourist. The thesis itself has data collected and processed. Actual research methods: On site direct survey in some selected hotels for data collection by observation method, direct interaction and interview. Analytic and synthetic methods to enlighten and embody the content of the study.
On the basis of which, to propose a solution to address the issues related to promotion, preservation, and exploitation of traditional food tourism of Halong.
